Pleurotus (Pleurotus ostreatus), also known as hiratake, is a mushroom widely cultivated and consumed around the world.

Found in Asia, Europe, South America, and Africa, during the Song dynasty (420–479 BC) it was called the “mushroom of celestial flowers.” It is characterized by an oyster-shaped cap, which can reach 20 cm in diameter, and a short stem; for this reason, it is also known as the “ear mushroom,” while in China it is called Ping Gu, meaning “flat mushroom.”

It is a very common species, thanks to the simplicity of its cultivation process, both at home and on an industrial scale, and it is especially appreciated in cooking.

Known as the oyster mushroom, pleurotus also stands out for its interesting properties, due to its content of high-molecular-weight polysaccharides, in particular β(1,3-1,6)-D-glucans.

Organic Pleurotus titrated at 30% of polysaccharides and at 15% of β(1,3-1,6)-D-glucans, with Pleurotus ostreatus, derived from DNA-certified mushroom strains.
