Egg albumen: contains more than 20 glycoproteins, protein complexes and glucose residues, especially: ovoalbumin, ovotransferrin, ovomucoid, ovoglobulin and lysozyme. Moreover, egg albumen binds important growth factors, such as riboflavin and iron.
